CHICKEN ALFREDO

INGREDIENTS

600-700g chicken thigh, diced
6-8 slices of bacon, chopped
½ red onion
2 tsp minced garlic
125g grated tasty cheese
125g unsalted butter
125g cream cheese
1½ tbsp. cream
1 tbsp. olive oil
½ cauliflower, diced into small florets
1 large zucchini, chopped 3cm pieces
100g baby spinach
Salt and pepper to taste

STEPS

Step 1. Sear chicken in sandwich press or skillet.
Step 2. Sauté bacon, onion and garlic in oil for around 10 minutes on medium heat. Transfer chicken to pan once sauté is finished.
Step 3. Steam cauliflower and zucchini for 8-10 minutes. Set aside.
Step 4. In a separate pot, stir the cheese, butter, cream cheese, and cream on medium heat until combined.
Step 5. Add vegetables, baby spinach and the sauce to the pan. Mix gently until fully coated.
Step 6. Serve hot with cracked pepper and parmesan.
