LOW CARB
CHRISTMAS TREE CUPCAKES

Christmas baking is always the best, but creating those precious memories with the kids is even better. The kids love baking just as much as I do: they love creating, and getting their hands and faces dirty. Here is what we did today. We made chocolate Christmas tree cupcakes using my Raspberry Chocolate Cupcake recipe, but omitting the raspberry juices and oils. You can, however, add chocolate oils instead.

Let's just say there was more than dishes to wash after this bake! Lol.
Bubby cried when we tried to take the spatula off her.

I usually fill my patty pans this full, sometimes a little less, but they turned out great filling them about a 1/4 inch from the top. This worked out to be around 2 tbsp. amounts per cupcake.

When it was time to decorate with frosting, we used 300-600ml whipping cream, 2-3 tbsp. powdered Natvia, and 2-3 tbsp. of sifted matcha green tea. It's entirely up to you how much sweetener and matcha you use; it depends on how sweet you would like it, and how deep you'd like the colour to be. We sprinkled the pipped matcha cream with powdered matcha, desiccated coconut, and a single walnut on top. Miss 5 states, "MUM that is not a star!", to which I replied, "yes it is today, hunny," lol.
