Here is a yummy, yummy recipe I have created. Mint Chip Ice Cream Filled Chocolate Eggs--they are so delish! Better yet, you can use any ice cream flavour you desire. I, however, have made my own low carb, sugar free, scoopable ice cream.

Would you ever think that this ice cream has spirulina in it? Well, it does, and it tastes amazing. The kids loved it and didn't even suspect it, so as a mum, I think I'm on to a winner! I always say my kids are the best testers I have.

MINT CHOCOLATE CHIP RECIPE

After making the delicious ice cream, it's now time to create the eggs. So super simple, yet so effective and amazing. The best thing about it is that not only can you create your own tastes and flavours to suit YOU, you also control what you put into your bodies and your children.

Use any molds you wish, but for these babies I used a medium-sized Easter egg mold which I purchased from my local Spotlight centre. I filled the mold with 90% Lindt chocolate, but you can use whichever chocolate you desire. Place it into the fridge to set, then fill it with your ice cream.

-PLACE INTO FREEZER FOR AN HOUR-

Tip: I like to place a metal cookie tray lined with non-stick baking paper into the freezer also. This helps aid the next step in helping them to not melt too much when you go to stick the 2 parts of the egg together.

 Once frozen, pop the eggs out of the molds onto the frozen tray, then put it into the freezer. Quickly stick two egg halves together until you have completed all 4 eggs. I then pop them into an airtight container and keep them in the fridge until ready to eat.

{GET CREATIVE}

Get creative with your eggs. Decorate the outside, drizzle chocolate over them, roll them in crumbs of seeds or nuts, or decorate with berries. It might get a bit messy for the kids to do this one, though, as it can melt quite quickly in warm little hands.

INGREDIENTS

Ice Cream
600ml thickened cream
1 cup milk of choice (I use unsweetened almond or macadamia milk)
2 large free range eggs
1-2 tsp xanthan gum (helps with texture)
2 tbsp. glycerine (coconut derived if you have it, helps with texture)
1 tbsp. vodka (to prevent crystallization)
1/4 cup powdered xylitol (no cooling effect)
1 tbsp. spirulina powder (good source of natural colour)

Mint choc chip oil (to taste)
200g 70-90% Lindt chocolate chopped (100g is fine, but I like more)
Chocolate Eggs
100g Lindt chocolate

STEPS
Step 1
In a saucepan over medium heat, whisk all the ingredients but the Lindt chocolate until it reaches at least 50-60 degrees Celsius.

Step 2
Place the ice cream mixture in the fridge in an airtight container to cool the ingredients completely for at least 2-3 hours.

Step 3
Using your ice cream churner, place your frozen ice cream bowl in and pop on the lid, then turn the machine on and pour the ingredients in, letting it churn for at least 20 mins.

Step 4
While your ice cream churns, prepare your egg molds by making sure they are clean and dry. Heat your chocolate in a heatproof bowl or jug in the microwave for 60 sec. Repeat if needed.

Step 5
Spoon 1-2 tsp amounts into each egg mold, making sure you coat the egg mold completely. Use a paint brush to brush up the sides. Place into the fridge and repeat this step until you have coated the eggs 2-3 times each, for a stronger and less brittle egg.

Step 6
By this stage your eggs should be ready to fill with ice cream. Once filled, put them into the freezer for 2-3 hours before popping them out of the molds.

Step 7
Stick the eggs together by placing a large cookie tray lined with non-stick baking paper into a 180 degree Celsius oven. Place the eggs ice cream side down onto the hot tray, 2 at a time, then immediately join them together. Place them into an airtight container and back into the freezer until ready to eat.
