MARSHMELLOW

INGREDIENTS

350 g water
3 tbsp. Xylitol
3 tbsp. gelatin
A few drops of strawberry/ vanilla oil

150ml boiled water

 

STEPS

Step 1. Add all ingredients but gelatine and boiled water to a non-stick skillet and heat on low- medium heat until everything is dissolved and there are no lumps.
Step 2. In a separate small jug add boiled water and gelatine and whisk until dissolved 3-4 mins. Once dissolved add to the skillet and whisk until well combined.

Step 3. Pour mixture into a mixing bowl, and blend with an electric mixer on high for 5-8 mins or until marshmallow is thick and glossy.
Step 4. Pour mixture into a prepared slice tin lined with baking paper. Place in the fridge and allow to set for 30 mins or so.
Step 5. Cut into squares and store in an airtight container in the fridge.

 

TIPS

You can double the batch or halve the batch if you need more or less marshmallows.
