3 cup almond flour
3 tbsp. sweetener of choice
3 tsp xanthan gum
3 tsp baking powder
pinch of salt
1 tbsp. coconut flour
1 tsp ground cinnamon
1/2 cup coconut cream, cold
2 large eggs
3 tbsp. butter, melted
2 tbsp. sukrin gold
1 tbsp. ground cinnamon
1 tsp vanilla bean paste
3/4 cup walnuts, chopped
1/4 cup walnuts, chopped & reserved
4 tbsp. coconut butter
2 tsp vanilla bean paste
1/4 cup coconut cream, cold
Step 1. Preheat oven to 180 degrees Celsius. Line a round cake tin with non-stick baking paper. Set aside.
Step 2. In a food processor place all the dry ingredients and blitz, add your eggs one by one while blitzing at the same time then add your coconut cream to combine. Once it forms a dough remove from the food processor and sandwich between 2 large sheets of non-stick baking paper. Roll out to 1-2 cm thick.
Step 3. To make the filling, place all ingredients except the walnuts into a small heat proof bowl and microwave on high for 60 sec. Using a pastry brush evenly spread the mixture right to the edges over your dough. Reserve at least 1-2 tbsp. of the mixture.
Step 4. Sprinkle 3/4 cup of walnuts evenly over the mixture, making sure to cover right to the edges. Roll the dough loosely into a log and cut 12 even pieces, starting from the centre (mine are usually about 3 cm thick).
Step 5. Once rolled carefully place into your cake tin. Using your pastry brush spread the remaining filling over the top and then sprinkle with the reserved walnuts. Place into your pre-heated oven and bake for 20-25 mins.
Step 6. While the buns are baking you can prepare the icing. Place all the ingredients into a heat proof jug and microwave on high for 60 sec. Once melted, combine until smooth then scoop the mixture into a disposable piping bag and set aside until your buns are cool enough to ice.
Step 7. Once buns are cooked allow them to cool. When they are cooled you can drizzle the icing over the tops. Then enjoy them with a cup of coffee and some friends.
