Pizza Month - Signature Recipe

INGREDIENTS
Pizza Dough One
2 cups almond flour
1/2 cup mayonnaise 
1 tsp xanthan gum
1 tbsp. psyllium husk
Pinch of salt

Pizza Dough Two
2 cups almond flour
1/2 cup Greek yogurt
1 tbsp. psyllium husk
2 tbsp. nutritional yeast
Pinch of salt

STEPS
Step 1. Preheat your oven to 200 degrees Celsius. 
Step 2. Whether you choose option one or two, place all dough ingredients into a large bowl. Mix with a silicone spatula until it forms a ball, then use your hands to knead it together.
Step 3. Cut the dough in half and roll each half between two large non-stick baking sheets with a rolling pin. Place onto 2 round pizza trays. Or, using a cookie tray, roll entire amount of dough into a rectangle, then place onto the cookie tray. Be sure to leave the baking paper on top of the dough as well as the bottom of the dough to prevent burning of the edges while cooking.
Step 4. Place dough into the oven and bake for 15-20 mins.
Step 5.  Once golden brown, remove from the oven and dress with whatever ingredients you desire.
Step 6. Place back into the oven with your toppings. Turn to grill and grill until golden and brown (5-10 mins)

Tips: Dough can be pre-made and frozen in an airtight container with baking paper or paper towel between each pizza. Freeze the dough uncooked and pre-rolled. No need to thaw out, just pop it straight into the oven and go from steps 4 onward, making sure you have non-stick baking paper on the bottom of your tray and one on top of the dough to prevent burning the edges.
If you are substituting from a yogurt to a mayonnaise or to coconut cream, you'll need to add 1 tsp of xanthan or guar gum to help with binding of the dough.

Almond flour - pumpkin seed flour or sunflower seed flour ratio 1:1
Xanthan gum - guar gum
Greek yogurt - coconut yogurt, mayonnaise + 1 tsp xanthan gum, cold coconut cream + 1 tsp xanthan gum
Mayonnaise - Greek yogurt, coconut yogurt, cold coconut cream
Nutritional yeast - parmesan cheese, grated
